Ingredients:
-1 cup yellow lentils
-1 onion, finely chopped
-2 garlic cloves, minced
-1 tsp ginger paste
-2 tomatoes, finely chopped

-1 tsp coriander powder

-1 tsp turmeric powder
-4 cups of water or vegetable broth
-Olive oil
-Salt and pepper to taste
Instructions:
1. Rinse the yellow lentils thoroughly and leave them soaking in water for about an hour. Drain the water and set aside.
2. In a large pot over medium heat, add 2 tablespoons of olive oil, onion, garlic and ginger. Stir occasionally until the onion turns translucent.
3. Add cumin powder, coriander powder, garam masala and turmeric powder. Mix well and let the spices cook for about 1-2 minutes.
4. Add chopped tomato and water to the pot and stir well. Bring to a boil.
5. Add the yellow lentils to the pot. Reduce heat to low, cover and simmer for 20-25 minutes or until the lentils are tender.
6. Using an immersion blender or a regular blender, blend the soup until it is smooth and creamy. If you use a regular blender, pour the soup back into the pot after blending.
7. Add salt and pepper to taste.
8. Serve the yellow lentil soup hot and garnish with fresh coriander leaves and a drizzle of olive oil.
Notes:
-If you don’t have yellow lentils, you can use red lentils or split peas instead.
-Add vegetables of your choice such as spinach, carrots or potatoes to make the soup more filling and nutritious.
-For a creamier texture, you can add coconut milk or cream.
