Ingredients:
– 4 cups of all-purpose flour
– 2 tsp of salt
– 2 tsp instant yeast
– 2 cups of warm water (110-115F)
– 1/4 cup of olive oil
– 2 tbsp of chopped fresh rosemary
– Sea salt for sprinkling
Instructions:
1. In a large mixing bowl, combine the flour, salt, and instant yeast. Mix until well-combined.
2. Slowly pour in the warm water and olive oil. Mix until a shaggy dough forms. You can mix this with a wooden spoon or even with your hands.
3. Once the dough has come together, turn it out onto a floured surface. Knead the dough for about 5-7 minutes, or until it becomes elastic and smooth.
4. Next, transfer the dough into a greased bowl. Cover the bowl with a damp cloth and let it rest in a warm place for about an hour or until it has doubled in size.
5. Preheat your oven to 425F.
6. Once the dough has risen, punch it down, and transfer it onto a greased baking sheet. Stretch the dough out to your desired shape and thickness. Typically, focaccia is flattened out to about 1/2 inch thickness.
7. Using your fingers, make some deep dimples all over the surface of the dough. Be sure to make deep dimples as this will allow for the olive oil and rosemary to sink in.
8. Drizzle the top of the dough with olive oil. Be sure to cover the entire surface.
9. Sprinkle the rosemary all over the top of the dough. Finally, finish it off with a sprinkle of sea salt.
10. Transfer the dough to the oven and let it bake for about 20-25 minutes. Or until the top is golden brown and the internal temperature reaches 190F.
11. Once done, let the bread cool for about 5-10 minutes before slicing and serving.
