What You’ll Need
- 500 grams of high-quality ground pork
- 1 tablespoon of salt
- 1 teaspoon of ground black pepper
- 1 teaspoon of paprika
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/4 teaspoon of ground coriander
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground allspice
- Casing of your choice (natural or collagen)
Step 1: Prepare the Meat
In a large mixing bowl, combine the ground pork, salt, black pepper, paprika, garlic powder, onion powder, coriander, nutmeg, and allspice. Mix the ingredients thoroughly until well combined.
Step 2: Stuff the Casing
If you’re using natural casings, soak them in water for about 30 minutes to soften them. Rinse thoroughly to remove any excess salt. If you’re using collagen casings, they are ready to use.
Attach a sausage stuffing tube to a sausage stuffer or a meat grinder. Place the casing onto the tube, leaving a 4 to 6-inch overhang. Stuff the casing with the meat mixture, being careful not to overstuff. Twist the sausage into 5 to 6-inch links and tie off the ends.
Step 3: Cook the Wurstel
Bring a large pot of water to a gentle simmer. Add the wurstel links and cook for about 20 minutes. This will ensure they are fully cooked and ready to be enjoyed. You can also grill or pan-fry the wurstel for a different taste and texture.
Step 4: Serve and Enjoy
Once cooked, remove the wurstel from the water and let them cool for a few minutes. Serve them as is or with your favorite condiments such as mustard, ketchup, or sauerkraut. Enjoy your homemade wurstel!
