Ingredients
- 2 pounds of goat meat, cut into chunks
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 cup of red wine
- 2 cups of beef or vegetable broth
- 1 can of diced tomatoes
- 2 bay leaves
- 1 teaspoon of dried thyme
- Salt and black pepper to taste
Instructions
Step 1: Prepare the Goat Meat
Before you start cooking, it’s important to prepare the goat meat. Pat it dry with a paper towel to remove any excess moisture. This will help you achieve a nice sear when browning the meat later on.
Step 2: Brown the Meat
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the goat meat chunks in batches, making sure not to overcrowd the pot. Brown the meat on all sides, then remove and set aside.
Step 3: Sauté the Vegetables
In the same pot, add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté until the vegetables are tender and aromatic, about 5 minutes.
Step 4: Deglaze with Wine
Pour in the red wine and stir, scraping the bottom of the pot to release any browned bits. Let the wine simmer for a couple of minutes to allow some of the alcohol to evaporate.
Step 5: Add the Remaining Ingredients
Return the browned goat meat to the pot. Add the beef or vegetable broth, diced tomatoes (with their juices), bay leaves, dried thyme, salt, and black pepper. Give everything a good stir to combine.
Step 6: Simmer to Perfection
Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer gently for about 2 hours, or until the goat meat becomes tender and easily falls apart.
Step 7: Serve and Enjoy
Once the stew is ready, remove the bay leaves and serve the goat stew hot with crusty bread or creamy polenta. The rich flavors and tender meat will surely delight your taste buds!
