Russian salad is a popular dish with roots in Europe. In this recipe, we will be adding a unique twist to it by incorporating shrimp and foam, giving the classic salad a refreshing and make-over.
Ingredients:
For the Salad
– 2 potatoes
– 2 carrots
– 10-12 cooked and peeled shrimps
– ½ cup of peas (frozen or canned)
– 3-4 pickles
– 2 boiled eggs
– 1 small onion
– 3-4 tablespoons Mayonnaise
– Salt to taste
For the Salmon Foam
– 100g of smoked salmon
– ½ cup of water
– ½ teaspoon of agar agar powder
– ½ cup of heavy cream
– Salt to taste
Instructions:
1. Start by boiling the potatoes and carrots until they are soft. Once cooked, slice the potatoes and carrots into small pieces and set them aside.
2. Boil or steam the peas until they are cooked – this should take 5-8 minutes. Once cooked, drain the peas and keep to one side.
3. Cut the boiled eggs into small cubes and set them aside.
4. Finely chop the onion and pickles.
5. In a mixing bowl, combine the sliced potato and carrots, chopped onions and pickles, cooked shrimps, and boiled egg cubes.
6. Add mayonnaise to the mix and mix well.
7. Add the cooked peas to the salad mix and stir gently.
8. Season the Russian salad with salt to taste.
9. Set aside the salad and start preparing the salmon foam.
Salmon Foam
1. In a saucepan, add water and agar-agar powder together and bring to boil. Stir until the powder is dissolved.
2. Remove from heat and add smoked salmon to the mix. Blend until smooth.
3. Add heavy cream and blend again.
4. Season the salmon foam with a pinch of salt.
5. Pour the salmon foam into a whipping siphon.
6. Charge the siphon with one cream charger, and shake a few times to distribute the gas.
Assembly
1. In a glass or small jar, add a layer of the Russian salad.
2. Shake the whipping siphon and spray a layer of salmon foam over the top.
3. Repeat the layering process until the jar is full.
4. Garnish with remaining cooked shrimp and some chopped pickles.
