This recipe is based on a classic European-style cake that’s a favourite during the fall. The tangy taste of ripe plums paired with the sweetness of sultana raisins makes it a perfect tea time snack or dessert.
Here are the ingredients that you will need:
– 200g self-raising flour
– 200g butter (softened)
– 200g caster sugar
– 2 large eggs
– 1/2 tsp vanilla extract
– 5-6 large plums (halved and pitted)
– 75g sultana raisins
– 50ml milk

Preheat the oven to 180C and butter a 20cm round cake tin.
In a bowl, beat the butter and sugar together until you get a fluffy, pale mixture. Add in the eggs, one at a time, whisking until combined. Add in the vanilla extract and mix well.

Remove the cake from the oven and let it cool in the tin for 10 minutes. Once it has cooled down slightly, turn it out onto a wire rack to cool down completely.
