Ingredients:
– 2 cups all-purpose flour
– 1 ½ cups granulated sugar
– 1 cup brewed coffee, cooled
– 1 cup unsalted butter, softened
– 3 eggs
– 1 tsp vanilla extract
– 1 tsp baking powder
– 1 tsp baking soda
– 1 tsp ground cinnamon
– ¼ tsp ground cloves
– 1/8 tsp salt
– 1 cup heavy cream
– 2 tbsp Irish whiskey
– 2 tbsp powdered sugar
Instructions:
1. Preheat your oven to 350°F. Grease a 9-inch cake pan and set aside.
2. In a medium-sized bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and cloves. Mix well and set aside.
3. In the bowl of your stand mixer, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
4. Add in the eggs and vanilla extract, one at a time, beating well after each addition.
5. Slowly add the dry ingredients to the butter mixture, alternating with the brewed coffee, until the batter is smooth and well combined.
6. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
7. While the cake is baking, make the Irish whiskey whipped cream. In a large mixing bowl, combine the heavy cream, powdered sugar, and Irish whiskey. Whip until the cream forms stiff peaks.
8. Once the cake has finished baking, remove it from the oven and let it cool for 10-15 minutes.
9. Once the cake has cooled, turn it out onto a serving plate and top with the Irish whiskey whipped cream.
