Step 1: Prepare Your Ingredients

Once the sugar and honey mixture has reached the soft crack stage and the egg whites are beaten to perfection, it’s time to combine the two mixtures. Slowly pour the hot sugar mixture into the bowl of beaten egg whites while continuously whisking. Be careful, as the hot mixture can splatter.
Step 5: Add the Flavors
Now, add the vanilla extract and mix it into the torrone base thoroughly. Then, fold in the chopped nuts, dried cranberries, dried apricots, and candied orange peel until well combined.
Step 6: Shape and Cool
Pour the torrone mixture into a parchment-lined baking dish or a silicone mold. Smooth the top with a spatula or the back of a spoon. Let it cool at room temperature for about 2-3 hours, until it becomes firm.
Step 7: Cut and Serve
Once the torrone has cooled and set, remove it from the baking dish or silicone mold. Cut it into bite-sized pieces or rectangular bars using a sharp knife. Dust the torrone pieces with powdered sugar to prevent sticking.
