Ingredients
- 2 whole sea bream, gutted and descaled
- 4 slices of lemon
- 4 sprigs of fresh rosemary
- 4 sprigs of fresh thyme
- 2 cloves of garlic, minced
- 1 small red onion, thinly sliced
- 1 small zucchini, thinly sliced
- 1 small carrot, thinly sliced
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C).
2. Start by preparing your vegetables. Thinly slice the red onion, zucchini, and carrot. Set aside.
3. Take two large pieces of parchment paper, around 15 inches in length, and fold them in half. This will create a crease in the middle, which will act as a guide later on.
4. Place one sea bream on each piece of parchment paper, making sure they are centered along the crease.
5. Season the sea bream with salt and pepper, both on the outside and inside the cavity.
6. Stuff each sea bream cavity with 2 slices of lemon, 2 sprigs of rosemary, 2 sprigs of thyme, and half of the minced garlic.
7. Arrange the sliced vegetables around each sea bream, spreading them evenly.
8. Drizzle 1 tablespoon of extra virgin olive oil over each sea bream, ensuring the vegetables are lightly coated.
9. Fold the parchment paper over the sea bream, starting at one end and creasing the edges tightly to form a sealed parcel. Repeat with the other piece of parchment paper.
10. Transfer the parchment paper parcels onto a baking sheet and place it in the preheated oven.
11. Bake for approximately 20-25 minutes or until the sea bream is cooked through and the vegetables are tender.
12. Carefully remove the baking sheet from the oven and let the sea bream rest for a couple of minutes.
13. Gently open the parchment paper parcels, being cautious of the hot steam that will be released.
14. Serve the sea bream in parchment paper directly on individual plates, allowing your guests to enjoy the delightful aromas as they unfold.
15. Garnish with additional fresh herbs, if desired, and serve alongside a fresh green salad or crusty bread.
