What is Squid Ink Rice?
Squid ink rice, also known as black rice or arroz negro, is a traditional Spanish dish that gets its distinctive color from the ink of squid. This black ink not only imparts a visually striking appearance to the rice but also adds a savory, slightly briny flavor. Don’t let the dark hue intimidate you; the taste is truly delightful!
Ingredients:
- 2 cups of rice (preferably short-grain)
- 1/4 cup of olive oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1/2 cup of white wine
- 4 cups of chicken or vegetable broth
- 1/2 teaspoon of salt
- 1 teaspoon of squid ink
- Fresh parsley, chopped (for garnish)
Instructions:
- Start by rinsing the rice under cold water to remove excess starch and set it aside.
- In a large pan, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic to the pan, sautéing until they become translucent and fragrant.
- Next, add the diced red bell pepper and continue cooking for a few minutes until it softens.
- Pour in the white wine and allow it to simmer for a couple of minutes, allowing the alcohol to evaporate.
- Add the rice to the pan, stirring it well to coat it evenly with the flavors in the pan.
- In a separate pot, bring the broth to a gentle boil.
- Slowly add the hot broth to the rice, one ladle at a time, stirring continuously until the rice absorbs the liquid before adding more.
- After adding about half of the broth, mix in the squid ink to give the rice that rich black color.
- Continue adding the remaining broth gradually, stirring constantly, until the rice is cooked to your desired consistency (approximately 20-25 minutes).
- Once the rice is cooked, remove it from the heat and let it rest covered for a few minutes before fluffing it with a fork.
- Garnish with freshly chopped parsley, and your squid ink rice is ready to be served!
