Ingredients:
– 250g flour
– 100g sugar
– 3 eggs
– 1 tsp baking powder
– 1 tbsp rum
– Zest of 1 lemon
– Salt
– Oil for frying
– Powdered sugar for coating
Instructions:
1. In a large mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt. Mix until homogeneous.
2. Add the zest of one lemon and mix it into the bowl.
3. In another mixing bowl, beat the eggs with a whisk. Add the rum into the mixing bowl and whisk until it’s all well combined.
4. Add the egg mixture to the flour mixture you prepared in step 1. Mix everything together until the dough is smooth and doesn’t stick to the bowl.
5. Leave the dough to rest for at least 30 minutes, but 1-2 hours is even better. You can cover the dough with cling film to prevent it from drying out.
6. When it’s time to fry the , pour the oil into a deep pan and heat it up. The oil should be hot, but not too hot. To test if the oil is ready, add a small piece of dough into the oil. If it starts to fry and turn golden brown, you can start adding in the castagnole.
7. Take small pieces of dough using a teaspoon or your hands and shape them into little balls. You can make them as big or small as you want, but aim for them to be bite-size.
8. Add the little balls into the oil, but make sure not to add too many at once as they will need space to cook evenly. Fry them until they are golden brown and crispy, this usually takes 1-2 minutes.
9. Once the castagnole are ready, remove them from the oil and drain them on some paper towels.
10. Once they have cooled a bit, sprinkle them with powdered sugar until they’re evenly coated.
And there you have it, homemade castagnole! They are perfect for sharing with friends and family or just enjoying as a little snack to brighten up your day. Enjoy!
