Ingredients for Beef Stew:
– 2 pounds of beef stew meat, cut into bite-sized pieces
– 3 tablespoons of all-purpose flour
– Salt and pepper
– 3 tablespoons of vegetable oil
– 1 onion, chopped
– 3 garlic cloves, minced
– 4 carrots, peeled and chopped
– 4 celery stalks, chopped
– 1 bay leaf
– 1 tablespoon of tomato paste
– 4 cups of beef broth
– 2 cups of red wine
– 2 teaspoons of dried thyme
– 2 tablespoons of chopped fresh parsley
– ½ cup of frozen peas
Ingredients for the Bread Roll Crust:
– 16 small bread rolls, such as dinner rolls
– 2 tablespoons of butter, melted
– 1 tablespoon of chopped fresh rosemary
– 1 tablespoon of chopped fresh thyme
– 1 teaspoon of garlic powder
– Salt and pepper
Instructions for Beef Stew:
1. Preheat the oven to 350 degrees Fahrenheit.
2. In a large bowl, toss the beef stew meat with 3 tablespoons of all-purpose flour, salt, and pepper.
3. In a large Dutch oven or oven-safe pot, heat 3 tablespoons of vegetable oil over medium-high heat. Add the beef in batches and brown on all sides. Remove the beef and set it aside.
4. Add the chopped onion, garlic, carrots, and celery to the pot and cook until the onions are translucent.
5. Add the bay leaf, tomato paste, beef broth, red wine, and dried thyme. Stir to combine.
6. Return the beef to the pot and stir to combine. Bring the mixture to a boil.
7. Cover the pot and transfer it to the preheated oven. Cook for 2 hours.
8. Stir in the peas and chopped fresh parsley. Set the pot aside while you make the bread roll crust.
Instructions for Bread Roll Crust:
1. In a small bowl, combine 2 tablespoons of melted butter, 1 tablespoon of chopped fresh rosemary, 1 tablespoon of chopped fresh thyme, 1 teaspoon of garlic powder, salt, and pepper.
2. Cut a small hole in the top of each bread roll and scoop out some of the soft bread inside.
3. Brush the flavored butter onto the inside and outside of each bread roll.
4. Place the bread rolls on top of the beef stew, covering the entire surface area. You may need to overlap the rolls slightly to cover the entire pot.
5. Cover the pot with foil and return it to the oven.
6. Bake for 20-30 minutes, or until the bread rolls are golden brown and crusty.
