Ingredients:
1. Three medium-sized zucchini
2. One teaspoon of olive oil for frying
3. One chopped onion
4. Two garlic cloves, minced
5. 500g of minced beef
6. Three cups of grated mozzarella cheese
7. One cup of grated parmesan cheese
8. 2 cups of tomato sauce
9. 350g of ricotta cheese
10. Two eggs
11. One tablespoon of dried basil
12. One tablespoon of dried oregano
13. Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F/190°C while you prepare the lasagna.
2. Slice the zucchini into thin rounds using a mandolin or sharp knife.
3. Heat a tablespoon of olive oil in a pan, add the chopped onion and garlic. Sauté for a few minutes until the onions become caramelised.
4. Add the minced beef to the pan and cook for approximately 15 minutes. Season with salt and pepper as desired.
5. Pour in the tomato sauce to the beef mixture and continue cooking for ten minutes while stirring occasionally.
6. In a separate bowl, combine the ricotta cheese, two grated eggs, and dried basil and oregano. Mix well until everything is well blended.
7. Take out a baking dish, pour a spoonful of tomato sauce on the bottom to prevent sticking.
8. Arrange slices of zucchini onto the dish until you have a solid layer.
9. Add a layer of the beef mixture on top of the sliced zucchinis.
10. Pour a layer of the ricotta and egg mixture on top of the beef mixture.
11. Sprinkle a generous amount of grated mozzarella cheese on top of the layer of ricotta.
12. Repeat the layering process of zucchinis, cooked beef, ricotta, and cheese until you have filled the baking dish.
13. End with a layer of mozzarella cheese and grated parmesan on top.
14. Bake for 35 minutes or until the cheese on top is golden brown.
15. After taking it out of the oven, let it cool for at least 10 minutes before serving.
