Instructions:

7. In a separate bowl, mix the cornstarch and water until the cornstarch dissolves completely.
8. Add the soy sauce, vinegar, honey, salt, and pepper to the skillet and stir well.
9. Pour the cornstarch mixture into the skillet and stir. Cook for 1-2 minutes until the sauce thickens.
10. Add the topinambur back to the skillet and stir well to coat the vegetables with the sweet and sour sauce.
11. Serve hot, garnished with sesame seeds if desired.
