Ingredients:
-½ lb of shell-shaped pasta
-1 lb of clams
-2 tbsp of olive oil
-½ onion, chopped
-2 cloves of garlic
-1 tbsp of tomato paste
-1 cup of white wine
-1/4 cup of chopped parsley
-1 tbsp of lemon juice
-salt and pepper to taste
Instructions:
1. Fill a large pot with salted water and bring it to a boil. Add the shell-shaped pasta and cook according to the package instruction. Once cooked, drain the pasta and set it aside.
2. Clean the clams by soaking them in a bowl of cold water for about 20 minutes to remove any grit. Scrub them, then rinse them under running water. Discard any clams that have opened before cooking.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook for about 4 minutes, stirring occasionally, until the onion is translucent and soft.
4. Stir in the tomato paste and cook for another 2 minutes, stirring occasionally, until it’s fragrant.
5. Pour in the white wine and let it come to a boil. Reduce the heat and let it simmer for 5-6 minutes or until the wine has reduced by half.
6. Add the clams to the pan and let them cook for 8-10 minutes or until they have all opened up. Discard any clams that have not opened up.
7. Stir in the chopped parsley and lemon juice and season with salt and pepper to taste.
8. Add the cooked pasta to the skillet and gently toss everything together until the pasta is coated with the sauce.
9. Serve in individual bowls and enjoy!
