5. Once the dough has risen, roll it out on a floured surface to form a large rectangle that is about 1/2 inch thick.
6. Place the flattened butter square in the center of the dough rectangle, folding over the edges of the dough to seal in the butter.
7. Fold the dough in thirds, like folding a letter, and then rotate it 90 degrees clockwise. Roll the dough out again and fold it in thirds again. Cover the dough with a kitchen towel and leave it to rest in the fridge for about 20 minutes.
8. Preheat the oven to 350 degrees Fahrenheit.
9. Take the dough out of the fridge and roll it out on a floured surface again, this time to form a long rectangle that is about 1/4 inch thick.
10. Cut the dough into long triangles, with each triangle about 6 inches wide at the base.
11. Roll up each triangle, starting from the base and rolling towards the tip, and then curve the ends to form a crescent shape.
12. Place the croissants on a baking sheet lined with parchment paper.
13. Whisk the egg in a small bowl and brush the tops of the croissants with the egg wash.
14. Bake the croissants for about 15-20 minutes until they are golden brown.
