Instructions:

1. Preheat your oven to 375 degrees F.

2. In a large skillet, brown the ground veal over medium heat until it’s cooked through and no longer pink. Remove the meat from the skillet and set it aside.

3. In the same skillet, add the onion and garlic and cook until the onion is soft and translucent.

4. Add the tomato paste, thyme, rosemary, paprika, black pepper, and salt to the skillet and stir until everything is well combined.

5. Pour in the beef broth, and add the cooked veal, carrots, peas, and celery. Bring everything to a simmer and let it cook for 10-15 minutes until the vegetables are tender.

6. In a separate small saucepan, melt the butter over medium heat. Once melted, whisk in the flour and let it cook for 2-3 minutes until it’s bubbly and slightly browned.

7. Add the milk to the small saucepan and whisk until everything is well combined. Cook for another 2-3 minutes until the mixture has thickened.

8. Pour the butter and flour mixture into the skillet with the veal and vegetable mixture. Stir until everything is well combined.

9. Roll out one of the pie crusts and place it in the bottom of a 9-inch pie dish. Pour the veal and vegetable mixture over the pie crust.

10. Roll out the second pie crust and place it over the top of the veal mixture. Crimp the edges of the pie crusts together to seal the pie.

11. In a small bowl, beat the egg and water together to make an egg wash. Brush the egg wash over the top of the pie crust.

12. Use a sharp knife to cut a few slits into the top of the pie crust to allow steam to escape while the pie bakes.

13. Place the pie in the preheated oven and bake for 45-50 minutes until the crust is golden brown and the filling is hot and bubbly.

14. Let the pie cool for a few minutes before slicing and serving.
