Ingredients:
– 2 chicken breasts
– 4 pork sausages
– 1 pound of chicken liver
– 2 eggs
– 1 tsp. salt
– 1 tsp. black pepper
– 1/4 tsp. nutmeg
– 1/2 tsp. cinnamon
– 1/2 cup breadcrumbs
– 1/2 cup white wine
– 2 cups chicken broth
– 1 onion, sliced
– 3 garlic cloves, minced
– 1 bay leaf
– 1 sprig of thyme
– 1 sprig of rosemary
Instructions:
1. Preheat your oven to 350°F.
2. In a large bowl, mix together the chicken, sausages, and liver. Add the eggs, salt, black pepper, nutmeg, cinnamon, and breadcrumbs. Mix everything together until it is well combined.
3. On a flat surface such as a cutting board or a baking sheet, place a piece of parchment paper. Spread the meat mixture out evenly over the parchment paper.
4. Create a long roll of the meat by rolling it over the parchment. Be sure to wrap the roll tightly around the meat mixture.
5. Once rolled up, tie the ends of the roll with kitchen string. This will help hold the roll together as it cooks.
6. In a large pot, bring the white wine, chicken broth, onion, garlic, bay leaf, thyme and rosemary to a boil. Add the meat roll and let it simmer for about 30 minutes, turning it over halfway through the cooking process.
7. Once cooked, remove the meat roll from the pot and let it cool down. You can also save the cooking liquid for use as a broth later.
8. Once cooled, remove the kitchen string from the meat roll and slice it into thin pieces. Arrange the slices on a platter and serve cold.
