Sautéed Milanese Risotto is one of the most famous dishes in the world of Italian cuisine. It’s a creamy, comforting, and delicious risotto dish filled with saffron, parmesan cheese, and other savory ingredients. It’s perfect for any occasion, whether it’s a warm dinner with family or a cozy night in with friends.

Ingredients:

– 1 tablespoon of olive oil
– 1 medium-sized onion, finely chopped
– 2 garlic cloves, minced
– 1 and 1/2 cups of Arborio rice
– 1/2 cup of dry white wine
– 4 cups of chicken broth, heated
– 1/2 teaspoon of saffron threads
– 1/2 cup of grated parmesan cheese
– 2 tablespoons of unsalted butter
– Salt and pepper to taste

Instructions:

1. Begin by heating up the olive oil in a large skillet. Once it’s hot enough, add in the onions and let them cook until they’re translucent and fragrant. Add in the minced garlic and continue to sauté for another minute, making sure the garlic doesn’t burn.

2. Add the Arborio rice into the skillet and stir it around for a few minutes so that it becomes coated in the oil and onion and garlic mixture. Keep stirring until the rice is lightly toasted, but not browned.

3. Pour the dry white wine into the skillet and stir the rice around. Wait for the wine to evaporate before adding in the chicken broth, ladles at a time. Make sure that you’re stirring the rice constantly in a figure-eight motion in order to release the starches from the rice and create that creamy texture that risotto is known for.

4. After you’ve added in two ladles of chicken broth, add in the saffron threads. This will give the risotto its iconic yellow color. Keep adding in the chicken broth in ladles and stirring for 20-25 minutes, or until the rice has become al dente.

5. Once the rice is cooked, add in the grated parmesan cheese and unsalted butter. Stir everything together until the cheese is melted and the butter is incorporated into the risotto. Season with salt and pepper to taste.

6. Turn off the heat and serve the Sauteed Milanese Risotto hot. You can garnish it with more grated parmesan cheese and chopped parsley.

The Sauteed Milanese Risotto is a classic dish that’s perfect for any occasion. It’s comforting, flavorful, and incredibly versatile. You can add in any other ingredients you like, such as mushrooms, peas, or shrimp. This dish is perfect for impressing your guests or simply indulging in a delicious meal at home.
