Here’s how to make Sardinian kid goat at home:
Ingredients:
1 Sardinian kid goat (4-5 lbs.)
1 head of garlic
2 sprigs of fresh rosemary
2 sprigs of fresh thyme
2 cups of red wine
2 cups of chicken broth
3 tbsp. of olive oil
Salt and pepper to taste
Directions:
1. Preheat the oven to 325°F.
2. Rinse and dry the kid goat, then season it generously with salt and pepper. Be sure to get seasoning in all the nooks and crannies of the meat.
3. Heat the olive oil in a large oven-safe pot or dutch oven over medium-high heat. Once hot, add the kid goat and brown it on all sides. This should take about 12-15 minutes.
4. While the goat is browning, peel the garlic and the cloves. Cut the cloves in half lengthwise. Strip the leaves off of the rosemary and thyme sprigs.

6. Add the chicken broth, rosemary, and thyme to the pot. Stir to combine. Then add the goat back to the pot, and spoon some of the liquid over it.
7. Cover the pot with a tight-fitting lid and place it in the oven. Roast the goat for 2-3 hours, or until it is fork-tender. You may need to add additional liquid to the pot during this time if it begins to dry out.
8. Once the goat is fully cooked, remove it from the pot and let it rest for 10-15 minutes before carving. Serve with any remaining sauce from the pot.
