Ingredients:
– 1 lb pork loin
– 1 small to medium cantaloupe melon
– 1 pint strawberries
– 1 bunch of arugula
– 1/4 cup chopped fresh mint
– 1/4 cup extra-virgin olive oil
– 1/4 cup balsamic vinegar
– 2 tbsp honey
– salt and black pepper to taste
Instructions:
1. Preheat your oven to 375F. Season your pork loin with salt and black pepper, then heat a skillet over medium-high heat. Add a bit of oil to the skillet, then sear your pork loin on all sides until it is golden brown.
2. Transfer your pork loin to the oven and roast for around 25-30 minutes, or until the internal temperature of the pork reaches 145F.
3. While your pork is cooking, begin to make the dressing for your salad. In a small bowl, whisk together your olive oil, balsamic vinegar, honey, and a pinch of salt and black pepper. Mix well until fully combined.
4. Remove your pork from the oven and let it rest for around 10 minutes before slicing it into thin pieces.
5. Cut your cantaloupe melon in half and remove all of the seeds. Cut the flesh of the melon into bite-sized pieces.
6. Rinse your strawberries under cold water, then remove the stems and cut them into halves.
7. Begin to assemble your salad by placing a bed of arugula on a large serving platter. Arrange the pieces of sliced pork over the top of the greens, then sprinkle the fresh mint over the pork.
8. Add the melon and strawberries to the salad, then drizzle the balsamic dressing over everything.
9. Toss your salad gently to ensure that all of the flavors are evenly distributed.
