Today, we are going to share our recipe for risotto with tips. This dish is perfect for springtime, when asparagus is in season and the weather is getting warmer.
Ingredients:
– 1 cup Arborio rice
– 2 cups chicken or vegetable broth
– 1 cup white wine
– 1 small onion, finely chopped
– 1 garlic clove, minced
– 1 bunch of asparagus, trimmed and cut into 1-inch pieces
– 1/2 cup grated parmesan cheese
– 1/4 cup heavy cream
– 2 tablespoons butter
– Salt and pepper to taste
– Olive oil for
Instructions:
1. Prepare the ingredients by cutting the asparagus into bite-sized pieces, chopping the onion, and mincing the garlic.
2. In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic and cook for 2-3 minutes, until softened but not browned.
3. Add the Arborio rice to the pot and stir to coat it with the onion and garlic mixture. Cook for 2-3 minutes, stirring occasionally, until the grains of rice are slightly toasted.
4. Pour in the white wine and stir until it has been absorbed by the rice. Then, add half a cup of the broth and stir until it has been absorbed as well.
5. Continue adding the broth, half a cup at a time, stirring until each addition has been absorbed before adding the next. This process should take around 20-25 minutes, or until the rice is tender but still slightly firm in the center.
6. While the rice is cooking, prepare the asparagus. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the asparagus and cook for 3-4 minutes, until tender-crisp. Season with salt and pepper to taste.
7. Once the rice is cooked, stir in the asparagus, grated parmesan cheese, heavy cream, and butter. Cook for an additional 2 minutes, stirring constantly, until everything is well incorporated and the risotto is creamy.
8. Serve the risotto hot, garnished with additional parmesan cheese and fresh herbs if desired.
This recipe for risotto with asparagus tips is a great way to enjoy the flavors of spring in a comforting, satisfying dish. The creamy texture of the risotto pairs perfectly with the crunch of the asparagus, while the parmesan cheese adds a rich, nutty flavor.
