Ingredients needed:
Polenta:
– 1 cup polenta
– 3 cups water
– ½ tsp. salt
– ½ cup grated Parmesan cheese
– 1 tbsp. olive oil
Pizza toppings:
– 1 ½ cups pizza sauce
– 2 cups shredded mozzarella cheese
– 1 cup cherry tomatoes
– 1 cup sliced black olives
– 1 cup sliced mushrooms
– 1 tbsp. dried oregano
– 1 tbsp. dried basil
– Salt and pepper to taste
Directions:
1. Preheat the oven to 400F.
2. In a saucepan, bring the water to a boil. Add the salt and whisk in the polenta, stirring constantly until it is thick and smooth. Lower the heat and continue to cook the polenta, stirring occasionally, for an additional 5-10 minutes.
3. Once the polenta has started to thicken, add the Parmesan cheese and olive oil, mixing until well combined.
4. Grease a pizza pan or baking sheet with cooking spray. Pour the polenta onto the pan and use a spatula to spread it out into a circle or square shape, about ½ inch thick.
5. Bake the polenta in the preheated oven for 20-25 minutes, until the edges are starting to brown.
6. Remove the pan from the oven and spread the pizza sauce over the polenta crust, leaving a ½ inch border around the edges.
7. Sprinkle the shredded mozzarella cheese over the sauce, and add on your desired toppings, such as cherry tomatoes, black olives, and mushrooms.
8. Sprinkle dried oregano, dried basil, salt, and pepper over the toppings for extra flavor.
9. Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
10. Remove from the oven, slice and serve hot.
