Ingredients:
For the dough:
– 2 cups all-purpose flour
– 1/4 cup sugar
– 1/4 cup unsalted butter
– 3 egg yolks
– 2 tbsp milk
– 1/2 tsp baking powder
– Pinch of salt
For the syrup:
– 1 cup honey
– 1/2 cup sugar
– 1/4 cup water
– 1 tsp grated lemon zest
– Vegetable oil for frying
Instructions:
1. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
2. Add the butter to the bowl and combine the mixture using your fingers until it becomes crumbly.
3. Add the egg yolks and milk to the bowl and mix until the dough comes together.
4. Turn the dough out onto a lightly floured surface and knead it until it becomes smooth and elastic.
5. Roll the dough into small balls about the size of a marble and set them aside.
6. In a deep frying pan or pot, heat the vegetable oil to 350°F.
7. Once the oil is hot, carefully drop the dough balls into the oil and fry them until they become golden brown and crispy.
8. Using a slotted spoon, remove the fried dough balls and place them on a plate lined with paper towels to remove any excess oil.
9. In a separate saucepan, combine the honey, sugar, water, and lemon zest over medium heat. Stir the mixture continuously until the sugar dissolves and the syrup becomes sticky.
10. Turn off the heat and add the fried dough balls to the saucepan. Mix well until all the dough balls are coated evenly in the syrup.
11. Using a large spoon, arrange the coated dough balls into a cone shape on a serving platter. Drizzle any remaining syrup over the top of the pignolata.
12. Allow the pignolata to cool to room temperature before serving.
