Ingredients:
1/2 pound chicken thighs, boneless and skinless
1/2 rabbit, cut into small pieces
1 onion, chopped
3 cloves garlic, minced
1 red pepper, chopped
1 yellow pepper, chopped
1 cup green beans, trimmed and chopped
1 tablespoon smoked paprika
1/2 teaspoon saffron threads
2 cups Valencia rice
4 cups chicken broth
1/2 cup white wine
1/2 cup chopped tomatoes
Salt and black pepper to taste
1/4 cup olive oil
Instructions:
1. In a large paella pan, heat the olive oil over medium-high heat. Add the chicken and rabbit and cook for 5-8 minutes until browned on all sides. Remove from the pan and set aside.
2. Add the onion and garlic to the pan and cook for 2-3 minutes, stirring occasionally, until the onions are translucent.
3. Add the red and yellow peppers to the pan along with the green beans and cook for 5-7 minutes until the vegetables are tender.
4. Add the smoked paprika and saffron threads to the pan and stir until the vegetables are coated in the spices.
5. Add the Valencia rice and stir until the rice is coated in the spice mixture. Cook for 1-2 minutes until the rice is slightly toasted.
6. Add the chicken broth, white wine, chopped tomatoes, salt, and black pepper to the pan. Stir everything together until well combined.
7. Bring the mixture to a boil and then reduce the heat to medium-low. Simmer the paella for 25-30 minutes until the rice is fully cooked and the liquid has been absorbed.
8. Add the chicken and rabbit back to the pan and stir until well combined. Cook for an additional 5-7 minutes until heated through.
9. Serve the paella hot, garnished with chopped fresh parsley.
