Instructions:

1. Begin by preparing the Pad Thai sauce. In a small bowl, combine the tamarind paste, fish sauce, brown sugar, water, rice vinegar, and red pepper flakes. Stir until all the ingredients are well combined, and set aside.

2. In a large pot, cook the rice noodles according to the package instructions. Once the noodles are cooked, drain them and rinse them with cold water to prevent them from sticking.

3. In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the minced garlic and stir until fragrant.

4. Add the shrimp and tofu to the pan and stir-fry until the shrimp are pink and cooked through.

5. Push the shrimp and tofu to one side of the pan. Pour the beaten eggs into the other side of the pan and stir until the eggs are cooked.

6. Add the cooked rice noodles to the wok, along with the Pad Thai sauce. Mix everything together until the noodles are well coated with the sauce.

7. Stir in the green onions, bean sprouts and half of the chopped peanuts.

8. Transfer the Pad Thai to serving plates, top with the remaining chopped peanuts, and serve hot.
