To start, you will need a pound of paccheri pasta, one cup of piennolo cherry tomatoes, one-quarter cup of capers, one small garlic clove, half a lemon, two tablespoons of olive oil, salt, black pepper, and 12 ounces of almost raw squid.
Begin by preparing the squid. Clean and devein the squid, then slice it into rings. Place the rings in a bowl and squeeze the juice of half a lemon over them. Set them aside to marinate while you prepare the other ingredients.
Next, halve the cherry tomatoes and mince the garlic. Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, add the garlic and sauté for one minute. Add the cherry tomatoes and capers to the pan and cook for five to seven minutes, or until the tomatoes have softened and released their juices. Season the tomato-caper mixture with salt and black pepper to taste.
Meanwhile, bring a large pot of heavily salted water to a boil. Add the paccheri pasta and cook for eight to ten minutes, or until the pasta is al dente. Reserve one cup of the pasta cooking water, then drain the pasta.
Add the drained pasta to the skillet with the tomato-caper mixture and toss to combine. If the pasta seems dry, add some of the reserved pasta cooking water to create a sauce. Allow the pasta and tomato-caper mixture to cook together for one to two minutes.
Finally, add the marinated squid rings to the skillet and toss to combine. The heat from the pasta and tomato-caper mixture will gently cook the squid. Be careful not to overcook the squid – it should be tender and just barely cooked through.
Paccheri pasta with capers, piennolo cherry tomatoes, and almost raw squid is a complex and delicious dish that showcases the beauty of simplicity. The salty capers, sweet cherry tomatoes, and tender squid play off of the chewy, hearty paccheri pasta for a satisfying, filling meal.
This recipe can easily be customized to fit your own tastes – try adding some red pepper flakes for a spicy kick, or swapping out the squid for shrimp or scallops. Regardless of how you make it, this paccheri pasta dish is sure to become a go-to recipe for dinner parties and weeknight meals alike.
