Ingredients:
-1/2 pound fresh pasta dough
-1/4 cup finely grated Parmesan cheese
-1/2 cup fresh ricotta cheese
-1/4 cup extra-virgin olive oil
-2 garlic cloves, minced
-1/4 cup fresh lemon juice
-1 teaspoon finely grated lemon zest
-1 tablespoon chopped fresh parsley
-2 teaspoons chopped fresh thyme
– Salt and pepper to taste
– Bottarga roe, grated
Instructions:
Prepare the Marinated Bottarga:
1. Begin by cleaning the bottarga. Rinse it under cold water to remove any impurities. Pat it dry with paper towels.
2. Grate the bottarga by using a microplane or a fine grater.
3. In a small skillet over medium heat, toast the bottarga for 1 to 2 minutes. Set aside.
Prepare the Filling:
1. In a medium-size bowl, combine ricotta cheese, Parmesan cheese, thyme, parsley, salt and pepper, and 1 tablespoon of the toasted bottarga.
2. Mix well and refrigerate until you’re ready to fill the ravioli.
Prepare the Ravioli:
1. Roll out the fresh pasta dough with a pasta machine or a rolling pin until it’s thin and transparent.
2. Cut the dough into circles using a cookie cutter.
3. Add a small amount of filling, about the size of a teaspoon, to the center of each circle.
4. Cover the filling with another circle of pasta dough. Press down around the edges to seal the ravioli.
5. Repeat the process until all dough and filling has been used.
6. Boil a pot of salted water and add the ravioli. Cook for 3 to 5 minutes.
7. Use a slotted spoon to remove the ravioli from the boiling water and set them aside.
Prepare the Marinated Sauce:
1. In a medium-sized bowl, whisk together lemon juice, garlic, lemon zest, salt, and pepper.
2. Slowly drizzle in the olive oil, whisking continuously.
3. Add the remaining toasted bottarga and mix together.
Serve:
1. Place the ravioli on a serving platter.
2. Drizzle the marinated sauce over the top of the ravioli.
3. Sprinkle grated nutmeg and additional Parmesan cheese on top.
