Ingredients:
For the Gazpacho:
– 2 cups of tomatoes
– 1 red bell pepper
– 1 small cucumber
– 1 small red onion
– 2 garlic cloves
– 1/4 cup of olive oil

Instructions:
1. Begin by preparing the gazpacho. Wash and halve the cherry tomatoes, and chop the red bell pepper, small cucumber, small red onion and garlic cloves. Add the chopped vegetables to a blender or food processor.
2. Next, add 1/4 cup of olive oil and 1/2 cup of red wine vinegar to the blender. Blend all the ingredients until they are smooth. If desired, add more olive oil or vinegar until you reach your desired consistency and taste.
3. Once the gazpacho has reached your desired consistency, season with salt and pepper to taste. Cover and chill the soup in the refrigerator for at least 1 hour before serving.
4. While the gazpacho is chilling, prepare the shrimp. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of cooked shrimp to the skillet and cook for about 2-3 minutes on each side, or until they are pink and cooked through. Season the shrimp with salt and pepper to taste.
5. For the Pecorino Yogurt, mix 1/2 cup of plain Greek yogurt with 1/4 cup of grated Pecorino cheese in a small bowl. Season with salt and pepper to taste.
6. To serve the gazpacho, divide it into bowls and top with cooked shrimp and a spoonful of Pecorino Yogurt. Garnish with fresh , chopped red onion, and a drizzle of olive oil if desired.
