1 lb Chicken livers
1/2 cup Madeira wine
1/2 cup Chicken stock
1/2 cup Unsalted butter
1 Large onion, chopped
3 Garlic cloves, minced
2 tsp Fresh thyme leaves

1. Rinse the chicken livers in cold water and remove any membranes or sinews. Pat dry with paper towels and set aside.

5. Remove the skillet from the heat and let the mixture cool for about 10-15 minutes.
6. Pour the mixture into a blender or food processor and blend until smooth. Taste and adjust the seasoning if needed.
7. Lightly grease a 9-inch loaf pan with a little bit of unsalted butter.
8. Pour the blended mixture into the loaf pan, cover with plastic wrap and refrigerate for at least 2 hours or overnight.
9. When ready to serve, remove the terrine from the refrigerator and run a sharp knife around the edges of the pan to loosen it.
10. Invert the terrine onto a serving platter and slice it into 1/2 inch thick slices.
11. Serve the terrine with some crusty bread, cornichons, and a glass of your favorite wine.
