Ingredients
You will need:
– 500g all-purpose flour
– 1/2 cup lukewarm water
– 5 egg yolks
– 1 tsp salt
– 1/4 cup sugar
– 1 stick of unsalted butter
– 1/2 cup of raisins
– 1 tsp vanilla extract
– The zest of 2 oranges and 1 lemon
– 1/2 cup of warm milk
– 1 oz of active dry yeast
Directions
Step 1
In a small bowl, mix together the warm water, sugar and yeast. Let the ingredients sit for 10 minutes, until the mixture becomes frothy.

In a separate bowl, mix the sugar, flour, salt, orange and lemon zest, egg yolks, raisins, and butter until combined.

Add the yeast mixture and the warm milk to the flour mixture and stir until the ingredients come together. Knead the dough by hand or use a mixer, until it becomes smooth and elastic. This may take some effort, but be patient.

Find the largest mixing bowl you have, and butter the interior to prepare it. Place the dough in the bowl and cover with a cloth or plastic wrap. Leave it to rise in a warm, draft-free location for at least 4 hours or overnight.

Once the dough has risen, punch it back down so that it returns to its original size. Use a knife or dough scraper to divide the dough into two portions. Then, use your hands to shape the dough into a sphere.

Then, press the sphere down gently to form a flat disk. Take one of the edges of the disk and fold it inwards towards the middle of the dough. Repeat this process with the opposite edge, folding it inwards, just past the first fold. This will create a “four corners” shape at the top of the panettone.

Transfer the dough to a panettone baking paper (they are usually greased with butter) or panettone form. Leave the dough to rise again for about 1-2 hours, or however long it takes until it has doubled in size.

Preheat your oven to 350°F. Then, brush the top of the dough lightly with some egg wash and bake for 45 to 50 minutes. Once the panettone is ready it should be golden brown on top.

Remove the panettone from the oven, and let it cool completely before slicing. Cut it into slices to serve.
