With the pandemic affecting the restaurant industry in 2020, many establishments in Rome had to temporarily close their doors. However, as we enter 2021, there are signs of hope and new beginnings in the city’s culinary landscape.
One of the most anticipated of the year is the new trattoria, Rita e Cantina. The restaurant is the latest project by chef Marco Martini, who has previously worked at some of Rome’s most renowned restaurants, including La Pergola and Il Pagliaccio.
Rita e Cantina is a family-style restaurant that focuses on traditional Roman cuisine and local ingredients. The menu features classics such as cacio e pepe, carbonara, and amatriciana, but with a modern twist. The restaurant also has an extensive wine list that showcases the best of Italian wines, with a particular emphasis on those from Lazio, the region surrounding Rome.
Another noteworthy opening in Rome is the new pizzeria, Sbanco. The restaurant is located in the trendy neighborhood of Pigneto and serves Neapolitan-style pizza cooked in a wood-fired oven. Sbanco is the brainchild of two young entrepreneurs, Andrea and Daniele, who decided to open the restaurant during the pandemic after losing their jobs in the hospitality industry.
Despite the challenges of opening a new business in such uncertain times, Sbanco has quickly gained a loyal following for its authentic pizza and friendly service. The restaurant also offers a selection of craft beers and cocktails to complement the pizza.
In addition to new openings, there have also been several changes of teams in Rome’s culinary scene. One of the most significant changes is at the Michelin-starred restaurant, Il Pagliaccio. After 26 years as the executive chef and owner of the restaurant, Anthony Genovese has decided to step down and hand over the reins to his sous-chef, Ciro Scamardella.
Scamardella is a native of Naples and has worked at Il Pagliaccio for over a decade. He is known for his creative dishes that blend Italian and Japanese flavors, as well as his attention to details and high-quality ingredients. Under his leadership, Il Pagliaccio is expected to continue its legacy as one of Rome’s top fine-dining destinations.
Another change of team in Rome is at the popular bakery, Pasticceria Regoli. After more than 100 years in the business, Regoli has been acquired by the local bakery chain, Roscioli. Despite the change of ownership, Regoli’s traditional pastries and cakes will continue to be made using the same recipes and techniques that have been passed down through generations.
These new openings and changes of team are a testament to the resilience and creativity of Rome’s culinary scene. Despite the challenges of the pandemic, there are still many opportunities for innovation and growth in the industry. With its rich culinary traditions and talented chefs, Rome is sure to continue to be a destination for food lovers from around the world.
