What You’ll Need
- 2-3 pounds of meat bones (such as pork bones, chicken carcasses, or beef bones)
- 8 cups of water
- 4-6 cloves of garlic, minced
- 1 large onion, quartered
- 2-3 tablespoons of soy sauce
- 2-3 tablespoons of mirin
- 1-2 tablespoons of miso paste
- Salt and pepper to taste
- 1 pound of fresh ramen noodles
- Toppings of your choice (sliced pork belly, soft-boiled eggs, scallions, seaweed, bamboo shoots, etc.)
Step 1: Preparing the Broth
1. Preheat your oven to 425°F (220°C). Place the meat bones on a baking sheet and roast for about 30 minutes, or until they turn golden brown.
2. In a large pot, add the roasted bones, minced garlic, and quartered onion. Cover them with water and bring to a boil.
3. Once the water comes to a boil, reduce the heat to low and simmer for 6-8 hours, skimming off any impurities that rise to the surface.
4. After simmering, strain the broth to remove the bones, garlic, and onion. Return the strained broth to the pot.
5. Add soy sauce, mirin, and miso paste to the broth. Mix well and let it simmer for an additional 20-30 minutes. Season with salt and pepper to taste.
Step 2: Cooking the Noodles
1. Cook the fresh ramen noodles according to the package instructions. Drain and set aside.
Step 3: Assembling and Serving
1. In a serving bowl, place a portion of cooked ramen noodles.
2. Pour the hot broth over the noodles, ensuring it covers them well.
3. Add your desired toppings, such as sliced pork belly, soft-boiled eggs, scallions, seaweed, and bamboo shoots.
4. Serve the ramen hot and enjoy it immediately.
