Gather Your Tools
Before you begin, make sure you have the following tools:
- Sharp boning knife
- Cutting board
- Kitchen shears
- Paper towels
Step 1: Remove the Wings
Start by holding the chicken firmly on the cutting board. Use your kitchen shears to cut through the skin and meat connecting the wing to the body. Repeat on the other side. Set the wings aside for later use or freeze them for another recipe.
Step 2: Separate the Thighs
Next, hold the chicken upright with the breast facing you. Locate the joint that connects the thigh to the body. Use your boning knife to carefully cut through the joint, separating the thigh from the rest of the bird. Repeat on the other side.
Step 3: Remove the Backbone
Lay the chicken on its back. Use your kitchen shears to cut along each side of the backbone, starting from the tail end towards the neck. Remove the backbone and set it aside for making chicken stock or discard it.
Step 4: Separate the Drumsticks
Hold the chicken upright again, with the breast facing you. Locate the joint that connects the drumstick to the thigh. Cut through the joint with your boning knife to separate the drumstick. Repeat on the other side.
Step 5: Separating the Breast
Flip the chicken so the backside is facing up. Use your boning knife to cut along the breastbone, starting from the neck down to the tail end. Once you’ve cut through the breastbone, use your hands to gently pull apart the breast, separating it from the ribcage. Repeat on the other side.
Step 6: Trim Excess Fat and Skin
Inspect the chicken pieces and trim any excess fat or skin. This step is optional but can help reduce the amount of fat in your final dish.
Step 7: Practice Makes Perfect
Deboning a chicken can be challenging at first, but with practice, you’ll soon master the art. Remember to take your time, work carefully, and use the right tools to ensure you achieve the desired results.
