Ingredients:
-1/2 cup uncooked sushi rice
-1/2 cup water
-1/4 cup rice vinegar
-2 tbsp. soy sauce
-2 tbsp. sesame oil
-1 tbsp. honey
-1/4 cup sliced cucumber
-1/4 cup sliced carrot
-1/4 cup sliced purple cabbage
-1/4 cup sliced radish
-1/4 cup sliced green onion
-1/2 lb. raw sushi-grade salmon or tuna, cut into small pieces
-1 tbsp. sesame seeds
Instructions:
1. First, rinse the sushi rice under cold water until the water runs clear. Then, in a small pot, combine the rice and water and bring it to a boil.
2. Once the rice is boiling, reduce the heat to low and cover the pot. Cook for 18-20 minutes, or until the rice is tender and all the water has been absorbed.
3. While the rice is cooking, make the dressing. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and honey.
