The Identità Golose 2018 food festival was held in Milan last month, featuring a lineup of world-renowned chefs and culinary experts. We had the chance to sit down and talk with one of the event’s headliners, Cristiano Savini, about his experiences in the food industry and his inspirations.

Savini is a Michelin-starred chef who is well known for his innovative, creative and modern approach to Italian cuisine, with his dishes often centered around locally-sourced ingredients. Based in Arezzo, Tuscany, Savini runs the kitchen of his eponymous restaurant and is a regular speaker and presenter at major culinary events.

We asked Cristiano what inspired him to become a chef, to which he replied: “My grandfather was a farmer and owned a small restaurant in central Italy, where I spent my childhood learning a lot about cooking and the importance of using fresh, seasonal ingredients. This experience ignited my passion for food and led me to pursue a career in the culinary industry.”

Savini is known for his use of unconventional ingredients in his dishes, such as citrus and tropical fruits, and he is not afraid to experiment with new flavors and cooking techniques, often incorporating unexpected ingredients into traditional Italian dishes.

When asked about his inspiration for creating new dishes, Savini explained: “Nature is a huge inspiration for me, and I find inspiration in the beauty of local landscapes, the scents of wild flowers and herbs, and the flavors that different seasons bring. I also draw inspiration from other cultures and cuisines, and am constantly seeking new flavor combinations and techniques to incorporate into my dishes.”

One of Savini’s most iconic dishes is his tartare of veal with beetroot and parmesan cheese, which he describes as “a perfect combination of sweet and savory flavors that are both comforting and exciting.” He also highlighted his passion for using underappreciated and often-overlooked ingredients in his cooking, such as offal, which he describes as “a very versatile ingredient that can be used in many different dishes and has a lot of flavor.”

Savini’s approach to food and cooking is rooted in his strong connection to the local land and culture of Tuscany, as well as his desire to create innovative and exciting dishes that challenge traditional notions of Italian cuisine. He also emphasized the importance of sustainability and responsibility in the food industry, and is committed to using locally-sourced and organic ingredients in his dishes whenever possible.

Overall, Cristiano Savini is a true culinary artist who is dedicated to pushing the boundaries of Italian cuisine while still paying homage to its rich history and traditions. His passion for cooking and his commitment to sustainability and responsibility in the food industry make him a true inspiration to chefs and food lovers alike. Anyone fortunate enough to dine at his restaurant or attend one of his presentations or workshops is sure to be in for a culinary delight.
