What You’ll Need
- 2 pounds of fresh sour cherries
- 2 cups of sugar
- 2 cups of water
- 1 tablespoon of lemon juice
- Mason jars or other airtight containers
Step 1: Prepare the Cherries
Start by washing the sour cherries thoroughly and removing any stems or leaves. If desired, you can also pit the cherries, but it’s not necessary for this preserving method.
Step 2: Prepare the Syrup
In a large pot, combine the sugar, water, and lemon juice. Bring the mixture to a boil, stirring occasionally until the sugar is completely dissolved. Let the syrup simmer for 5 minutes.
Step 3: Cook the Cherries
Add the washed cherries to the simmering syrup and cook them for about 2 minutes. Be careful not to overcook the cherries as they will become too soft. Remove the pot from heat and let it cool for a few minutes.
Step 4: Pack and Seal the Jars
Using a ladle, carefully pack the cherries into clean, sterilized Mason jars or other airtight containers. Leave about 1 inch of headspace at the top. Pour the syrup over the cherries, covering them completely. Gently tap the jars to remove any air bubbles. Wipe the rims of the jars clean and seal them tightly.
Step 5: Process the Jars
If you want to store your preserved cherries at room temperature, you’ll need to process the jars to create a vacuum seal. Place the sealed jars in a boiling water bath for 10 minutes, making sure the jars are fully submerged. Remove the jars from the water bath and let them cool undisturbed on a towel for several hours.
Step 6: Label and Store
Once the jars are completely cooled, label them with the date and contents. Store the preserved sour cherries in a cool, dark place. They will be ready to enjoy after 2-3 weeks, allowing the flavors to meld and the syrup to further develop its sweetness.
