Now that your starter is well underway, it’s important to feed it regularly to keep it healthy and active. Follow these steps:
- Discard all but 50 grams of your starter.
- Add 50 grams of whole wheat flour and 50 grams of filtered water to the container with the remaining starter.
- Mix well, ensuring the flour and water are fully incorporated.
- Cover and allow it to sit at room temperature for 24 hours.
- Repeat this feeding process every day, discarding most of the starter and adding fresh flour and water, until your sourdough starter is consistently active and bubbling. This typically takes around 7 to 10 days.
