– 2 tbsp vegetable oil

– ½ onion, finely chopped
– 150g mixed seafood (shrimp, squid and scallops)
– ½ cup broccoli, finely chopped
– 2 tbsp Japanese takana (mustard leaves)
– 2 tbsp soy sauce
– Salt and pepper to taste

Instructions:

1. Cook rice: Rinse 2 cups of rice in cool water three to four times until the water comes out clear, then drain. This will remove excess starch and give your rice a much softer texture. Cook the rice with 2.5 cups of water in a rice cooker or on a stove according to the package instructions.

2. Prepare the vegetables: Finely chop the garlic, ginger and onions. Rinse ½ cup of broccoli in cool water, chop the florets into small pieces and cut the stalk into thin slices. Grab 2 tbsp of pickled mustard leaves and cut them roughly.

3. Prepare the seafood: Remove the tail and legs from the shrimp, peel the shells off and devein them. Cut the squid into thin strips and remove the black head and insides. Cut the scallops in halves.

4. Cook the fried rice: Heat the vegetable oil in a high sided skillet or wok on high heat. Stir fry the garlic, ginger and onion until fragrant. Add the mixed seafood (shrimp, squid and scallops) and cook until they turn golden brown. Add the chopped broccoli and pickled mustard leaves and stir fry a few more times.

5. Add rice: Once the veggies and seafood are fully cooked, add the cooked rice to the pan and stir fry for at least five minutes. Add soy sauce and salt to taste.

6. Serve: Serve it hot with pickled vegetables or Takuan (pickled daikon radishes).
