Step 1: Prepare Your Milk
Start by pouring cold whole milk into the metal milk pitcher. Remember to only fill it up to about one-third of the pitcher’s volume. Using cold milk will help create a better foam texture when steamed.
Step 2: Positioning the Steam Wand
Next, place the steam wand of your espresso machine into the milk pitcher. Make sure the tip of the wand is slightly below the surface of the milk but not touching the bottom of the pitcher. This positioning will create optimal foam.
Step 3: Start Steaming
Turn on the steam wand, and allow it to run for a moment to purge any water deposits. Once the steam is pure, position the tip of the wand just below the milk’s surface and start steaming. The steam wand should create a gentle whirlpool motion in the milk.
Step 4: Monitor the Temperature
If you have a thermometer, insert it into the milk pitcher. Ideally, you want to achieve a temperature between 150°F and 160°F (65°C to 70°C). This temperature range ensures a sweet and creamy foam while avoiding scorching the milk. If you don’t have a thermometer, pay attention to the temperature by touching the bottom of the pitcher gently.
Step 5: Texture the Foam
As the milk heats up, it will start to foam. You want to texture the foam to achieve a creamy and velvety consistency. To achieve this, lower the pitcher slightly, allowing the steam wand to introduce more air into the milk. Continuously move the pitcher in a circular motion to distribute the foam evenly.
Step 6: Stop Steaming
Once the milk reaches the desired temperature, turn off the steam wand and remove it from the milk pitcher. Wipe the wand with a damp cloth to remove any milk residue promptly.
Step 7: Pour and Enjoy
Now that you have the perfect foam in your milk, it’s time to pour it into the espresso shot. Holding the pitcher at an angle, pour the milk slowly into the cup, allowing the foam to sit on top of the espresso. The smooth texture and beautiful presentation will enhance your cappuccino experience.
