Ingredients
- 4 large bell peppers (any color)
- 1 cup cooked rice
- 1 pound ground beef (or any meat/veggie substitute)
- 1/2 cup diced onion
- 1/2 cup diced tomatoes
- 1/2 cup grated cheese (cheddar or mozzarella works great)
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Step 1: Prepare the Peppers
Start by preheating your oven to 375 degrees Fahrenheit. Wash the peppers and slice off the tops. Remove the seeds and white membrane from the inside. Arrange the peppers in a baking dish and set them aside.
Step 2: Cook the Filling
In a large skillet, cook the ground beef over medium heat until browned. If you’re using a vegetarian substitute, follow the package instructions for cooking. Add the diced onions and tomatoes to the skillet and cook for an additional 5 minutes. Season with garlic powder, dried oregano, salt, and pepper. Stir in the cooked rice and half of the grated cheese. Mix well until all ingredients are combined.
Step 3: Stuff the Peppers
Spoon the filling mixture into the hollowed peppers, pressing it down gently to ensure it’s tightly packed. Place the pepper tops back on if desired. Sprinkle the remaining grated cheese over the tops of the stuffed peppers.
Step 4: Bake and Serve
Cover the baking dish with aluminum foil and bake for 25-30 minutes, or until the peppers are tender and the cheese has melted. Serve hot and enjoy your perfectly stuffed peppers!
