What is scacciata?
Scacciata is a delicious rectangular-shaped stuffed bread, similar to a calzone or a stuffed pizza. It originates from Sicily and is typically filled with a variety of savory ingredients such as cheese, vegetables, and cured meats. It is a popular street food and a staple in Sicilian homes.
Ingredients
- 2 ½ cups all-purpose flour
- 1 packet active dry yeast
- 1 cup lukewarm water
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 cup grated cheese (such as provolone or mozzarella)
- 1 cup sliced cured meats (such as salami or prosciutto)
- 1 cup sautéed vegetables (such as bell peppers, onions, and eggplant)
- 1 tablespoon dried oregano
- Salt and pepper, to taste
Instructions
- In a small bowl, dissolve the yeast in lukewarm water. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Using your hands or a dough hook, mix the ingredients until a soft and slightly sticky dough forms. If the dough is too dry, add more water; if it’s too wet, add more flour.
- Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into two equal portions. Roll out each portion into a thin rectangular shape.
- Spread the grated cheese, cured meats, and sautéed vegetables evenly over one of the dough rectangles. Sprinkle with dried oregano and season with salt and pepper.
- Place the second dough rectangle on top of the filling, pressing the edges together to seal.
- Transfer the scacciata onto the prepared baking sheet and brush the top with olive oil.
- Bake for approximately 25-30 minutes or until golden brown.
- Remove from the oven and let it cool for a few minutes before slicing.
