Next, it’s time to add in your sweetener. For our recipe, we’re using honey, but you could also use maple syrup, agave nectar, or any other sweetener of your choice. Start by adding in a small amount of sweetener and tasting the mixture as you go. Depending on your taste preferences, you may want to add more or less sweetener than what’s called for in the recipe. Once you’ve added in your sweetener, it’s time to add in your vanilla extract and salt. These ingredients will help to round out the flavor of your chocolate and give it a bit of complexity.
Now that your chocolate is fully combined, it’s time to pour it into a mold or onto a lined baking sheet. You can use any mold you like – ice cube trays, small bowls, or even silicone cupcake liners work well. Be sure to tap the mold gently on the counter to remove any air bubbles and to smooth out the surface of the chocolate. If you’re adding any toppings – like chopped nuts, dried fruit, or sea salt – sprinkle them over the top of the chocolate now.
Once your chocolate is in the mold, place it in the refrigerator to set. The amount of time this takes will depend on the size of your mold and how thick your chocolate is. Generally speaking, it will take anywhere from 30 minutes to an hour for the chocolate to fully set.
