Ingredients:
- 3 ½ cups all-purpose flour
- ⅔ cup warm milk
- ½ cup granulated sugar
- ½ cup unsalted butter (softened)
- 3 large eggs
- ⅓ cup raisins
- ⅓ cup candied orange peel
- 2 teaspoons active dry yeast
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ¼ teaspoon grated lemon zest
Step 1: Activate the Yeast
In a small bowl, dissolve the yeast in warm milk. Let it stand for 5-10 minutes until the mixture becomes frothy.
Step 2: Combine Ingredients
In a large mixing bowl, combine the activated yeast mixture, flour, sugar, softened butter, eggs, vanilla extract, salt, and grated lemon zest. Mix well until a sticky dough forms.
Step 3: Kneading the Dough
Dust your hands and the working surface with flour. Transfer the dough onto the surface and knead it for about 10 minutes until it becomes smooth and elastic.
Step 4: Adding Raisins and Orange Peel
Flatten the dough and sprinkle the raisins and candied orange peel evenly over it. Fold the dough in half and knead it gently to distribute the fruits throughout the dough. Continue to knead for another 2-3 minutes.
Step 5: First Rise
Place the dough into a greased large bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for about 2 hours or until it doubles in size.
Step 6: Shaping the Panettone
Punch down the risen dough to release any air bubbles. Shape it into a round loaf, gently rotate it to the top, and place it into a panettone mold or a deep cake pan. Let it rise again for another hour.
Step 7: Preparing for Baking
Preheat your oven to 350°F (175°C) and make a cross-shaped incision on the top of the panettone dough. This helps it expand evenly during baking. Optionally, you can place small pieces of butter on top of the dough to give it a beautiful golden crust.
Step 8: Baking the Panettone
Bake the panettone in the preheated oven for approximately 40-50 minutes or until it turns golden brown on top. You can test if it’s done by inserting a toothpick into the center; if it comes out clean, the panettone is ready!
Step 9: Cooling and Serving
Remove the panettone from the oven and allow it to cool in the mold for about 10 minutes. Then, transfer it to a wire rack to cool completely. Once cooled, cut a slice, sit back, and indulge in the soft and flavorful delight of your homemade panettone.
Don’t hesitate to experiment with different flavors such as adding chocolate chips or diced almonds to the dough. Enjoy this beloved Italian treat with your family and friends, and share the joy of homemade panettone this holiday season!
