Gather Your Tools
Before you begin, make sure you have the following tools on hand:
- Sharp boning knife
- Cutting board
- Kitchen shears
- Twine
Step 1: Remove the Legs and Wings
Start by placing the turkey breast-side up on a cutting board. Using your kitchen shears, carefully cut through the skin and joint between the thigh and body to remove the legs. Repeat the process to remove the wings as well. Set the legs and wings aside for later use or freezing.
Step 2: Remove the Backbone
Turn the turkey over so the backside is facing up. Locate the backbone and use your sharp boning knife to cut along both sides of the backbone from the neck to the tail. Carefully lift and separate the backbone from the turkey, setting it aside.
Step 3: Loosen the Breast
Flip the turkey back to breast-side up. To loosen the breast from the ribcage, gently run your fingers under the skin, starting at the neck and working toward the cavity. Be cautious not to tear the skin. Once the breast is detached, pull it away from the ribcage.
Step 4: Remove the Thigh Bones
Locate the thigh bone and insert your boning knife along its length, freeing the meat from both sides. Once the bone is exposed, carefully cut around it, gradually releasing the meat. Repeat the process for the other thigh bone.
Step 5: Trim Excess Fat and Skin
Inspect the turkey and trim any excess fat or skin. This will help the turkey cook evenly and provide a neater appearance.
Step 6: Fold and Tie
With the breast meat facing up, gently fold one side of the turkey over to fold it in half. Using twine, tie the turkey together to maintain its shape during cooking. Make sure to secure the legs and wings as well.
