What You’ll Need
- Live blue crabs
- A large pot
- Ice
- Water
- Salt
- A sharp knife
Step 1: Prepare the Crabs
Before you start cleaning blue crabs, you need to prepare them properly. Begin by filling a large pot with water, adding enough salt to make it taste like seawater. Bring the water to a boil, and then add the live crabs to the pot carefully. Cook the crabs for about 10-12 minutes until they turn bright red.
Step 2: Cool the Crabs
Once the crabs are cooked, remove them from the pot using tongs and transfer them to a large bowl filled with ice water. This rapid cooling will stop the cooking process and make them easier to handle later on.
Step 3: Remove the Top Shell
Now that the crabs have cooled down, you can begin the cleaning process. Hold a crab firmly and flip it upside down. Locate the apron, which is the triangular-shaped flap on the bottom of the crab’s body. Lift and pull the apron to remove it, exposing the mouth of the crab.
Step 4: Clean the Gills
The next step is to clean the gills, also known as the dead man’s fingers, which are located on each side of the crab’s body. Use your fingers or a pointed tool to lift and remove the gills. Make sure to remove all of them, as they are not edible and can affect the flavor of the crab meat.
Step 5: Break the Crab in Half
To make it easier to access the meat, you’ll need to break the crab in half. Hold the crab firmly in one hand and use the other hand to pull the top shell away from the body. This will expose the meat inside the crab.
Step 6: Remove the Guts and Mandibles
Once the crab is broken in half, you’ll see the guts and mandibles. Use your fingers or a small spoon to remove the guts, which are located in the center of the body. Be careful not to remove the yellow substance called the mustard, as it adds flavor to the meat. Next, use your fingers or a knife to remove the mandibles, which are the mouthparts of the crab.
Step 7: Break the Crab in Sections
After removing the guts and mandibles, you can further break the crab into smaller sections. This is optional, but it makes it easier to serve and eat the crab. Use a sharp knife or your hands to separate the crab into segments.
Step 8: Enjoy!
Now that your blue crabs are cleaned and ready, it’s time to enjoy the delicious meat. You can use the cleaned crab in various recipes, such as crab cakes, crab soup, or simply steamed with butter and Old Bay seasoning.
With this step-by-step guide, you’ll be able to clean blue crabs like a pro. So, go ahead, get yourself some fresh blue crabs, and impress your friends and family with your seafood skills!
