Step 1: Preparing the Milk
Pour the gallon of whole milk into the stainless steel pot. Sprinkle the citric acid over the milk and stir gently to dissolve. Heat the milk over medium-low heat to reach a temperature of 90°F, stirring occasionally to prevent it from scorching.

With a slotted spoon, transfer the curds to a microwave-safe bowl, leaving the whey behind. Microwave the curds on high for 1 minute, drain any excess whey, and knead the curds like dough. Microwave for an additional 35 seconds and knead again. Repeat this process until the curds become smooth and stretchy.
Step 6: Adding Salt
Sprinkle the non-iodized salt over the mozzarella and knead it to incorporate. Taste a small piece to determine if additional salt is desired.
