Gathering Ingredients
Before we begin, let’s gather all the ingredients necessary to create this mouthwatering dish:
- 1 pound of beef, braised and shredded
- 1 cup of ricotta cheese
- 1/2 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 onion, finely chopped
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 package of fresh pasta sheets
- 1 cup of beef broth
- 1/2 cup of red wine
- 1 cup of tomato sauce
- Fresh basil leaves for garnish
Preparing the Filling
To make the filling for our ravioli, we will combine the braised and shredded beef, ricotta cheese, grated Parmesan cheese, minced garlic, chopped onion, salt, and black pepper in a mixing bowl. Mix all the ingredients thoroughly until they are well combined.
Assembling the Ravioli
Now it’s time to assemble our ravioli. Place a fresh pasta sheet on a clean, lightly floured surface. Spoon a tablespoon of the filling onto the pasta sheet, leaving some space between each mound of filling. Gently brush some water around each mound of filling to moisten the pasta sheet. Place another pasta sheet on top, gently pressing around each filling mound to seal the ravioli. Use a sharp knife or a ravioli cutter to cut out each ravioli and set them aside.
Cooking the Ravioli
In a large pot, bring salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 3-4 minutes or until they float to the surface. Drain the cooked ravioli and set them aside.
Braising the Ravioli Sauce
In a separate pan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until they turn golden brown. Then, add the beef broth, red wine, and tomato sauce. Stir the sauce well and bring it to a simmer. Let it simmer for about 10 minutes to allow the flavors to meld together.
