To get started, you will need to make the crepes themselves. While there are many variations to a crepe recipe, the following ingredients will be necessary:
– 1 cup all-purpose flour
– 2 eggs
– 1/2 cup milk
– 1/2 cup water
– 1/4 teaspoon salt
– 2 tablespoons melted butter
Whisk all of these ingredients together until the batter is smooth. Let the batter rest for about 10 minutes while you get the filling ready.
For the filling, you will need:
– 2 cups of sliced mushrooms
– 1 tablespoon butter
– 1 tablespoon olive oil
– 1/4 cup chopped onion
– 2 cloves garlic, minced
– 2 teaspoons thyme
– Salt and pepper
– 1/4 cup grated Parmesan cheese
In a sauté pan, heat the butter and olive oil over medium-high heat. Add the mushrooms and cook until they start to release their liquid and become soft, about 5 minutes. Add the onion and garlic and cook for another minute or two until they soften. Finally, add the thyme, salt, and pepper, and cook for another minute to blend the flavors.
To assemble the crepes, heat a non-stick skillet over medium heat. Once the skillet is hot, use a ladle or measuring cup to pour about 1/4 cup of batter into the skillet. Swirl the skillet around to spread the batter into a thin layer. Cook the crepe for about 1-2 minutes or until the edges start to brown. Gently flip the crepe over and cook for another 30 seconds or so until both sides are lightly browned.
Fill the crepe with about 2-3 tablespoons of the mushroom filling and sprinkle with Parmesan cheese. Fold the crepe in half, then in half again to form a triangle. Repeat the process with the remaining batter and filling until you have used it all up.
Serve the crepes warm, garnished with additional thyme leaves and grated Parmesan cheese if desired. They are also delicious with a side salad or roasted vegetables. Crepes with mushrooms and thyme are a versatile meal that can be enjoyed any way you like!
