Ingredients
• 4 medium-sized squid
• 1 cup cooked rice
• 1 large onion, finely chopped
• 2 cloves garlic, minced
• 1 can diced tomatoes
• 1/2 cup peas
• 1/2 cup carrots, diced

Instructions
1. In a pan over medium heat, add 2 tablespoons of olive oil. Once heated, add the chopped onion and garlic and sauté until the onions are translucent.
2. Add the diced tomatoes to the pan and cook until the liquid has evaporated.
3. Add the diced carrots, bell pepper, and peas to the pan and stir until they are well mixed with the tomato sauce.

9. Place each stuffed squid in a baking dish and cover with foil.
10. Bake for 25-30 minutes or until the squid is cooked through. Remove the foil during the last 5 minutes of cooking to allow the squid to brown on top.
